The name of the bar is derived from an indigenous Caribbean tribe that occupied Florida and the Caribbean islands. Ciboney, as a bar, offers a Caribbean ambiance. It is a Carribbean bar located in Remedios Circle, right in the heart of Malate, Manila where salsa street dancing started. Every Tuesday night is Salsa night. There is a spacious dance floor, and lots of tables including a veranda where you can enjoy fresh air coming from Manila Bay. Lots of young people frequent the place especially during the weekends where Latin Hip Hop and RNB music were played.It opens at 5 p.m., and the management is very accomodating for requests to play salsa music as long as you bring a crowd to dance at the dance floor. - Ares Andres

Salsa - Last night was my first time to learn salsa and I loved every minute I spent despite my lack of stamina to keep up with my dance partners. Carlos from Pinoyjug invited me to this salsa gig at the Ciboney bar in Malate. I met Ares who is teaching salsa lessons along with his students. The bar was accomodating and the music is in full swing that none of us wasted time to jump in the dance floor and have our lessons. In a few minutes, I was able to get the basic steps and dance along with the rhythm. The trouble is that salsa has a very fast beat that my legs are cramping. I had to rest after ten minutes of dancing and down at least a glass of water. But all in all, the experience was exhilirating that I can't stop tapping my feet whenever the tune comes in my mind. Dance Lessons in Mississippi
Here in Manila, Philippines, some starts at 9:30 pm and lasts till 2 a.m. But sometimes it depends on the crowd. At Cafe Havana, in Greenbelt, they start at 9:30 pm. However at Cafe Havana in Malate, they start at 11 pm. But if salseros came earlier, the DJ start playing salsa songs. My group hangs-out to a bar called Ciboney. Weekend nights were usually pop music, but since we started coming to this bar, salsa is being played more frequent. We go to this bar at 5 pm, late afternoon until past midnight. We do our dance practice, as well as sharing new steps to those interested.

Die Circle Pension, die bei Köhler noch erwähnt wird, wurde 2002 in das Restaurant Ciboney umgewandelt, das am Abend schleichend in eine kleine Disco, manchmal mit Livemusik, übergeht.
